
My last article for the Los Angeles Times was about string. A well-wrapped cone, actually. Which I thought was kind of hilarious, since the Keats bit actually made it past the copy editors (copy editors like to edit out all literary references, and don’t even try theological references; at least none of mine ever made it through the censors). It was a fun story to write. I got to practice my knots and reread bits of ‘The Shipping News’. And I got to hang out in the kitchen at Providence and watch Michael Cimarusti string up his lobsters.
“You gotta love any kitchen tool that you can get at Home Depot. At the top of my list of must-have hardware-store cooking gear — along with an inexpensive Microplane and a blowtorch — is a simple ball of string. Or at least it’s my favorite until Thomas Keller figures out how to sous-vide with duct tape.”
